Sabores, a new restaurant in Goa, was launched by Akshay Quenim of Tataki and Shoyu fame. It is located within Clube de Palma in Bambolim and serves 60 guests. Akshay’s family has ties to Hotel Mandovi, a historic Goan hotel once famed for its crab and classic dishes. Sabores does not try to copy that legacy, but adds a fresh take to Goan-Portuguese cuisine. The restaurant reflects Goa’s Hindu and Christian culinary heritage with subtle Portuguese influence. The menu features confident dishes like chicken corrado, crisp rissóis de camarão, charred pork belly with amsol glaze, and smoky pork roast. The bread is simple yet thoughtful, served with house-made butters. Some dishes, like the Goan green beef curry and Chapora, still need fine-tuning. The cocktail list shines with innovative drinks such as Flor de Palma and Vindaloo, praised for their balance and creativity. Mango Verde, a mango cocktail, was less successful. Sabores aims to honor Goa’s food culture without copying history. The restaurant plans regular Fado music nights and uses small touches like postcard comment cards to engage diners. The average meal for two costs around ₹3,000 including alcohol. Sabores adds a new flavorful stop for Goan food lovers beyond the well-known beach scene.
